Meet the Vasilopita, also know as St Basil Pie /Kings Pie!! It’s a Greek & Cypriot New Year baking tradition for many of us Greeks. The Vasilopita is a New Year cake served in honour of St. Basil. A coin is hidden in the cake and it’s known that who receives it in their piece, it is said to have good luck in the New Year. 😉 .
Each home has its own flavour variation whether it be a bread or cake it is sweetened with an orange flavour! Our family recipe is this Citrus Sweet Honey Yogurt Cake flavoured with Mandarin Orange, orange blossom and Brandy that will be served at our family table New Years morning! This cake is delicious enjoyed all winter long and makes for a perfect breakfast, snack or dessert treat.
3 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup butter, unsalted and at room temperature
1/2 cup, quality honey
4 large eggs
3/4 cup greek yogurt
1/4 cup Brandy
zest and juice of 3 clementine oranges
icing sugar for dusting
Honey & Orange Blossom Syrup
1/2 cup quality honey
1/4 cup water
2 tbsp orange blossom water
To make the orange blossom syrup, in a medium saucepan, bring all ingredients to a boil. Reduce heat and simmer for 5 minutes. Set aside to cool completely.
Preheat oven to 350 degrees. Coat an 8 inch round springform pan with butter and set aside.
In a medium bowl, combine together the flour, baking powder, baking soda and salt. Whisk in clementine zest and set aside. In a bowl of an electric mixer, use the paddle attachment to mix the butter and honey together for 3-4 minutes until light and fluffy.
To the bowl of your mixer, beat in the eggs one at a time. Add yogurt, brandy, clementine juice and mix to combine. Begin adding the flour mixture a little bit at a time. Scrape the sides of the bowl as necessary. Mix for a couple minutes until the batter is smooth and all the ingredients are well incorporated.
Pour the batter into the prepared pan and bake for 35-40 minutes or until toothpick inserted comes out clean.
Let cake stand for 5 mins and remove to platter. Poke about 10 holes halfway through the cake and pour syrup evenly on top. Let cake cool completely and dust with icing sugar before serving.
