Its Strawberry season here in Ontario and the warmer Summer weather is finally here. This light strawberry summer dessert was inspired by my love of the Italian classic Tiramisu. Layers of lady fingers nestled between creamy mascarpone with a fresh strawberry and orange blossom flavour. This desert is not only fresh and delicious, its no bake so for the warmer summer days, you don't need to turn on your oven.

18 lady fingers
2 pouches (14 g ) of unflavoured gelatine
250 g mascarpone cheese
1 1/2 cup whipping cream
zest of one orange
tsp pure vanilla
1 pint fresh strawberries, hulled and thinly sliced
Strawberry Orange Blossom Puree
2 cup fresh strawberries, hulled
9 g pouch Vanilla sugar
1 1/2 tbsp orange blossom
Line a 9x4 loaf pan with plastic wrap with the wrap overlapping on the sides of the pan. Place in refrigerator to chill.
To make cheese filling, in a small glass bowl, add gelatine and 1/2 cup of hot water. sir and let cool.
In a large bowl, add mascarpone cheese, with a hand blender, whip until fluffy. Add whipping cream and continue whipping until cream is fluffy, about 2-3 minutes. Add gelatine and vanilla and whip until blended. Stir in orange zest and place in refrigerator to keep cold.
To make strawberry puree, blend all ingredients until smooth and place in a shallow bowl. Remove pan and cheese mixture from refrigerator to assemble. Dip lady fingers in strawberry puree ensuring they are well drenched. Line the bottom of the loaf pan with the lady fingers. Each layer will have 6 lady fingers. Divide the cheese mixture into three equal amounts. Top lady fingers with one of the portions of cheese mixture and top with a layer of sliced strawberries. Repeat with the remaining two layers. You should finish with a layer of fresh strawberries on top.
Place in refrigerator to set for 4-6 hours.
Reserve any left over strawberry syrup for drizzling.
Gently remove cake with the sides of the plastic wrap to a serving platter. Carefully remove plastic wrap and discard. If you are a chocolate lover, grate top with chocolate before serving.
