Farm-To-Table Collaboration with Nancys Cravings

December's farm-to-table collaboration is with my friend Nancy. She is a Caterer and owner of Lemon Drop Catering, author of Nancys Cravings Blog, ambassador for Blue Goose Chicken, antibiotic free meats, raised with care by Canadian Farmers, and a wonderful cook who creates beautiful dishes. I was really excited when Nancy agreed to visit us on the farm for a foodie collaboration and I couldn't wait to cook with her in the farm kitchen. We decided to prepare a holiday meal using our organic farm produce and premium organic & free range Blue Goose chicken to celebrate local with our farm family & volunteers.

With all the beautiful winter veggies on the farm, This Roasted Vegetable recipe was definitely on the menu. We gathered up all of winters finest such a Acorn Squash, Candy & Yellow Beets, Heirloom Carrots, Red and White Onions, Shiitake Mushrooms and whole farm garlic all tossed in Canadian Maple Syrup and seasoned with fresh herbs. This was a simple recipe that brought sweet beauty to our holiday meal.

Move over potatoes as Nancy shared her family her family recipe for Cornbread Pudding! This is a dish Nancy says that her kids cannot live without. Don't let the simplicity of this dish foul you, it is absolutely addictive and was a farm family favourite. Head on over to Nancy's blog and add this CornBread Pudding to your holiday menu.

You can't have a holiday meal without a stuffing! My family loves couscous, especially Israeli couscous. What's the difference, it looks like little pearls of grain toasted which gives it a slight savoury taste. My favourite brand is Wild Roots Pearl Harvest Blend, which is a mixture of couscous, chickpeas, Italian Orzo & Red Quinoa. This can be purchased at Costco or other Organic Markets. Tossed with Shiitake Mushrooms, fresh herbs, friend cranberries and seeds, it makes a perfect holiday stuffing or side. I have been making my version of this holiday Israeli Couscous Stuffing for years and my family loves it and now I have shared it with you!

Now for the main attraction! With Nancy being an ambassador or Blue Goose Chicken, it was such a perfect collaboration for a farm-to-table holiday meal.
