I cannot believe it has been over year since I launched The spicy Olive website. It has been an incredible journey not only on the farm but all the wonderful and creative talent I have had the opportunity to connect with. I am very grateful and thankful for all of your love and support. In saying that, I am excited to announce an new initiative on The Spicy Olive website. There have been many bloggers, foodies and chef's who inspired me and what better way to get to know them, then, spend time doing what we love. My initiative is not only to collaborate, create and share delicious simple recipes with them, but to support and introduce the talent I have had the honour to meet with all of you. I would like to introduce to you Nic (Nicole) and Nat (Natalia) The Sneaky Mommies , I had the opportunity to first meet Nic and Nat when they visited the farm to participate in a Food Photography class. It was an immediate connection, I fell in love with their warm, kind and loving nature and their passion for creating healthy nutritious meals for their families using fresh local ingredients. What's so sneaky about these beautiful mommies, they share tested and perfected recipes that take the stress out of preparing healthy meals and snacks that your family will devour. Beets in cupcakes, lots of health veggies in pasta Bolognese and quinoa, carrots, zucchini and spinach in meatballs.......whaaaat! Having school age girls, I definitely need the help sneaking in healthy ingredients in their favourite meals. Since they were my inspiration for this initiative, I was thrilled to invite them into my kitchen to create a healthy farm-to-table recipe to share with all of you.
Who doesn't enjoy snacking on chips and dip. Well that's one of my girls favourite snacks but we all know that it's not the healthiest option when it comes to school lunches and after school snacks. My Sneaky Mommies came to the rescue and helped me create a chip and dip recipe that was not only healthy but absolutely delicious and addictive.
These Crispy Baked Zucchini rounds are a perfect substitute for chips. We have taken our farm zucchini and cut them in thin rounds, smothered them in a honey dijon mustard and coated them with gluten free breadcrumbs which gave them a delicious crunch and were absolutely addictive.
Well, we all know, chips go well with dip and of course we have that covered. Now lets talk about the dip. Its not just any dip but a homemade ketchup that we could have enjoyed in spoonfuls. Made with a few simple ingredients, like our farm garlic, onions, crushed tomatoes and spiced with turmeric, celery salt and a touch of sweetness with smoked honey. It's a ketchup you will not only want to enjoy with our chips but on everything!!!!!
It was not only fun creating and cooking with these lovely mommies but watching them in action styling and photo shooting made it for a creative and fun collaboration as we shared tips and stories.
What even made our day together memorable, was how much we enjoyed sitting in my garage devouring our creation and getting to know each other and planning our next collaboration.
