Portuguese Piri Piri BBQ Mussels

We love our family time at the cottage and I must say, meals sure seem to taste better on the dock and by the water! BBQ Mussels is one of our family favourites at the cottage, especially with a side of grilled baguette to mop up the spicy sauce!!

Piri Piri Sauce:

1/3 cup (75 mL) dry white wine

1 tsp (5 mL) grated lemon rind

3 tbsp (45 mL) freshly squeezed lemon juice

2 tbsp (30 mL) tomato paste

2 tbsp (30 mL) extra-virgin olive oil

1 tsp (5 mL) sweet paprika

¼ tsp (1 mL) salt

½ tsp (2 mL) crushed red pepper flakes

4 cloves garlic, minced

1 shallot, minced

2 lbs. mussels, scrubbed and beards removed

3 tbsp. Italian flat leaf parsley, finely chopped

Preheat grill to medium heat.

To prepare sauce, in a medium glass bowl, whisk together all ingredients.

Add the sauce in a large disposable foil pan. Place pan on grill and close the lid, let sauce cook for 2-3 minutes to bring the sauce to a boil.

Add the mussels in the pan and stir to coat with sauce. Cover the pan with a piece of aluminum foil ensuring it is sealed tight to trap the steam to cook the mussels. Close the lid and cook for 8-10 mins, checking to see if the mussels have all opened. If not, continue cook for an additional 2-3 mins.

Add mussels to a large deep serving dish and pour their sauce over them. Sprinkle with parsley and serve with grilled baguette to mop up the sauce.
