(Honey & Pistachio Cypriot Donuts)

These simply delicious honey donuts are part of our Cypriot family holiday celebrations.  It’s a joy to share my tradition for your family holiday table!!

Ingredients:

 

Honey Syrup:

1 ½ cup quality honey

½ cup sugar

1 cup water

1 tbsp. fresh lemon juice

2 whole cloves

2 inch cinnamon stick

 

Donuts:

3 cup all-purpose flour

1 cup lukewarm milk

8gr pkg. instant dry yeast

½ cup lukewarm water

¼ cup brandy

4 cup Canola oil for frying

¼ cup pistachios, finely chopped

 

Preparation:

 

To make syrup: Combine all the ingredients in a pot over medium heat. Stir well until sugar has dissolved, 3-5 mins. Bring to a slow simmer until slightly thickened, about 6-7 more mins. Set aside to cool.

To make donuts: In a large bowl, add the milk and yeast, stir with a fork and let stand for 3 mins.

Into the same bowl, add the flour, water and brandy.  Whisk together until the mixture becomes a smooth batter.

Cover the bowl with plastic wrap and place in a warm spot for the dough to rise at least 1 hour.

In a deep medium frying pan, heat oil to high heat until it begins to bubble. 

Dip a teaspoon in water, place a heaping spoon of the dough into the hot oil. Repeat this procedure but do not over crowd the pan. Ensure you dip the spoon in the water each time to avoid the batter from sticking to the spoon.

Fry donuts for 3 -4 mins, use a slotted spoon to push them into the oil turning them on all sides until golden brown.  

Place the donuts on a large plate lined with paper towel to absorb the oil.  Repeat with the rest of the dough.

When done, place the donuts in the honey syrup and stir to ensure they are well drenched. Drain, place on a serving platter and drizzle with chopped pistachios.
