Heirloom Radish, Tomato, Cucumber & Spring Onion Salad tossed in a Fresh Mint Lime Vinaigrette
Fresh Mint & Lime Vinaigrette:
3 tbsp. extra-virgin olive oil
3 tbsp. fresh lime juice
1 tbsp. grainy dijon mustard
2 tbsp. fresh mint, finely minced
Salt & fresh ground pepper
6 heirloom radishes, thinly sliced
1/2 large English cucumber thinly sliced and rounds cut in half
2 large tomatoes, cut in half, thinly sliced
3 green onions, thinly sliced, white and green parts
For vinaigrette: Whisk all the vinaigrette ingredients together and season with salt & pepper, set aside.
For salad: Mix all ingredients in a large bowl. Toss with vinaigrette and serve.
