Guacamole Salad with Farm Fresh Eggs
This weeks share baskets feature our Cherry Striped Tomatoes and field Cilantro. This simple fresh salad is perfect for those hot summer days and a delicious meal for brunch, lunch or even a light dinner.
4 tbsp. extra-virgin olive oil
3 tbsp. fresh lime juice
1 large garlic clove minced
Salt & fresh ground pepper
1 ½ cup variety of cherry tomatoes, halved
1 English cucumber, diced
2 ripe avocado, diced
½ cup sweet onion, diced
1 cup fresh cilantro leaves
2 farm eggs, fried or soft poached
Salt and fresh ground pepper
Tortilla chips (optional)
For dressing: Whisk all ingredients together until creamy, season with salt & pepper and set aside.
For salad: Mix all ingredients in a large bowl and toss with dressing.
Add to platter and top with eggs and season with salt and pepper. Serve with tortilla chips if using.
