Grilled Mediterranean Sea Bream

Sea Bream is one of my favourite fish to grill. It is a very tasty fish, with a firm white flesh and does not have too many bones.  Here, I have shared a simple and fresh family recipe that takes no time to make but brings out its subtle flavour and aroma. Be sure to ask your fishmonger to de-scale and clean your fish for you.  It’s wonderful paired with your favourite steam vegetables for a light and healthy summer meal.

Ingredients:

2 (400 g) each sea bream, de-scaled and cleaned

Salt and fresh ground pepper

1 large lemon, cut in 6 round slices + 3 tbsp. fresh lemon juice

½ cup extra-virgin olive oil

1 garlic clove, minced

¼ cup Italian flat leaf parsley, stems removed and leaves finely chopped

 

Preparation:

Preheat heat grill to medium-high heat. Oil a large grill pan large enough to fit both fish or two individual pans.

Wash the fish, pat dry and lay them on a the pan, season the fish generously with salt and pepper, ensuring you season the inside cavity at the stomach.

Place 3 lemon rounds in each fish. Grill fish 10–12 minutes on each side, careful not to overcook the fish as the flesh can dry out and can lose its flavour.

In a small bowl, whisk the oil with the lemon juice and garlic until the sauce thickens. Season with salt and pepper and set aside.

When the fish has cooked, place them on plates. Gently insert a knife from the cut side until you reach the backbone, and separate the two halves of the fish, butterfly shape until the flesh of the fish is exposed completely.

Drizzle fish with the lemony sauce and top with fresh parsley.
