Grilled Halloumi & Farm Egg

Bruschetta

Ingredients:

 

1 large tomato, seeds removed, diced

1/2 english cucumber, diced

1/4 cup sweet onion, finely diced

2 tbsp. fresh mint, finely chopped

5 tbsp. extra-virgin olive oil 

salt and fresh ground pepper

1 pkg. (250 g) Halloumi cheese, cut in 1/4 inch slices, 8 slices

1/2 rustic baguette, sliced down the middle and cut in 4 equal portions

4 farm fresh fried eggs, 

Preparation:

Heat  grill  on high heat.

In a medium bowl, add tomatoes, cucumber, onion and mint. Toss with 3 tbsp. of olive oil and season with salt and pepper. set aside.

Brush inside of baquette pieces with the remaining 2 tbsp. of olive oil.

Carefully oil grill well to avoid any sticking. Grill Halloumi cheese on each side for 2-3 mins until grill marks form and cheese is slightly melted.

Grill baquette pieces, cut side down for 2 mins until grill marks form.

To assemble, top each baquette piece with 2 pieces of halloumi. Divide bruschetta mixture and top  halloumi.

Add fried egg and season with salt and pepper.
