Fresh Green Chickpea & Tahini

Hummus

Ingredients:
 

1/2 cup tahini (sesame paste)

1 small red chilli pepper, finely chopped (optional)

3 garlic cloves, crushed

3/4 tsp. salt

2 cup fresh green chickpeas

1/4 cup flat leaf parsley, finely chopped

1/2 cup fresh lemon juice

3/4 cup extra-virgin olive oil

Preparation:

 

In a food processor, combine tahini, salt, garlic and chilli pepper. Process until smooth.

Add the chickpeas and parsley, reserving 2 tbsp. of chickpeas and 1 tbsp. of parsley for topping, process 1-2 mins.

Gradually add lemon juice and olive oil and process until creamy.

Top with remaining chickpeas, parsley and a drizzle of olive oil. Serve with warm pitas.
