Farm To Table Fresh Brown Rice 

Mediterranean Bowl with a Mint Caper Citrus Sauce

It's so easy to get inspired each day at the Farm. Every where you turn, there is always something fresh growing before you. This fresh and delicious rice bowl features the farms organic field Spring Onions & Crispy Lettuce. Combined with tomotao, Cucumber, Goat Feta & Parsley, makes it a hearty nutrious bowl in no time. For you meat lovers, top with grilled chicken, steak or pork. Why not make it a breakfast bowl by topping it with a poached or fried egg!


​2 cup brown rice, cooked

1cup lettuce, shredded

1 tomato, diced

½ cup sweet onion

½ English cucumber, diced

½ cup goat feta, crumbled

3 tbsp. Italian flat leaf parsley, stems removed, finely chopped


Fresh Mint Caper Citrus Sauce:

4 tbsp. extra-virgin olive oil

3 tbsp. fresh lemon juice

2 tbsp. fresh mint, finely chopped

1 tsp. Dijon mustard

1 tbsp. capers

Salt and fresh ground pepper



To make sauce: Whisk together all ingredients until well incorporated and creamy. Season with salt and pepper and set aside.

In two medium bowls, divide the rice evenly. Top each with lettuce, tomato, onion, cucumber and feta. 

Whisk sauce again to incorporate well and drizzle on top, sprinkle with fresh parsley and serve.
