Mix Green, Celery & Potato Salad with Apple Cider Vinaigrette

I have taken all the delicious nutritious produce featured in this weeks’ local share baskets and created a simple salad for our farm lunch.




5 medium yellow potatoes, peeled and quartered

2 cup mix greens

2 cup celery sticks with leaves, chopped

1 cup red onion thinly sliced

4 soft or hard boiled eggs, cut in quarters


Apple Cider Vinaigrette:

1/3 cup extra-virgin olive oil

3 tbsp. apple cider vinegar

1 tsp. Dijon mustard

1 garlic clove, minced

Salt and fresh ground pepper



In a bowl, whisk together all the vinaigrette ingredients and season with salt and pepper. Set aside.

Place potatoes into a large pot and cover with salted water. Bring to a boil and reduce heat to medium-low, cover, and simmer until tender, about 20-25 minutes. Drain and cut into cubes.

In a large bowl, add the potatoes, mix greens, celery and onion and gently toss with dressing.

 Place on platter and top with eggs.
