Winter Greens with Pears, Cranberries, Spiced Pecans & Goat Feta

Tossed in a Wild Blueberry Jam Balsamic Vinaigrette

This winter greens salad speaks to all the holiday flavours of the season and it is one of my favourites to serve during the holidays. I love using fresh ingredients from local organic farmers and quality preserves to make the perfect vinaigrette to bring the flavours together. Bonne Maman has created special preserves following traditional cherished recipes. These delicious jams are produced in France using all natural ingredients with no artificial colours, no additives or preservatives. Being a farm-to-table advocate, I use quality ingredients when developing recipes and Bonne Maman is truly a farm to jar favourite. This recipe features their Wild Blueberry Jam, where I have created a simple and delicious vinaigrette to complement the local winter greens.  Paired with a 2014 Reisling, from one of our favourite local Niagara Wineries Two Sisters Vineyards, it makes a beautiful start to your holiday dinner.

Ingredients:

Vinaigrette:

¼ cup extra-virgin olive oil

3 tbsp. balsamic vinegar

2 tbsp. Bonne Maman Wild Blueberry Jam

1 garlic clove, minced

Salt and fresh ground pepper

 

Salad:

6 cup winter greens mix, baby kale, baby spinach, collard greens, romaine

1 cup red onion, thinly sliced

½ cup dried cranberries

½ cup spiced pecans

½ cup goat feta, crumbled

1 Bosc or Bartlett pear, quartered and thinly sliced

 

Preparation:

In a medium bowl, whisk all the vinaigrette ingredients until creamy. Season with salt and pepper and set aside.

In a large salad bowl, mix greens, onions, cranberries and pecans and toss well with dressing.

Sprinkle with feta and top with sliced pears.
