Porridge Oats & Ancient Grains Maple Butternut Squash & Apple Stuffing 

Fall has arrived here in Ontario, cooler weather, warm sweaters, changing leaves and of course, comfort food. Ingredients such as Apples, fall and winter Squash and comforting herbs & spices like sage, thyme, rosemary, cinnamon and nutmeg are moving in. With Canadian Thanksgiving just a week away, families are busy planning their family gatherings and menu. When I was asked to create a stuffing recipe using Rogers Oats, I was thrilled. Being a farm-to-table & local advocate I was happy to take on the challenge. Rogers are Canadian all natural Oats with no salt, no sugar, high in fiber with no additives, which I feel good about serving to my family. I decided to choose Rogers Porridge Oats & Ancient Grains, an all-natural combination of 8 different grains (Oat, rye, barley, spelt and khorasan flakes, oat bran, millet, flaxseed, quinoa flakes) forming a wholesome blend with a high fibre count. Paired with Butternut Squash, Apples, Maple Syrup and toasted Pumpkin seeds, make for a delicious and nutritious twist to the traditional holiday stuffing. Ingredients:

1 ½ cup (375 mL) Rogers Porridge Oats & Ancient Grains

3 cup (750 mL) vegetable broth, no salt added

2 tbsp. (30 mL) olive oil

1 sweet onion, finely diced

3 cup (750 mL) butternut squash, ½ inch diced

2 granny smith apples, ½ inch diced

8 fresh sage leaves, chopped

Salt and fresh ground pepper

2 tbsp. (30 mL) pure maple syrup

½ cup (125 mL) pumpkin seeds

 

Preparation:

In a large pot, bring vegetable broth to a boil. Add Rogers Porridge Oats & Ancient Grains, reduce heat and cover. Cook for 8 to10 minutes, stirring occasionally.

In a large non-stick sauté pan, heat oil over medium heat. Add onions and sauté for 1to2 minutes until translucent.

Add butternut squash and cook stirring occasionally for 6-7 minutes until slightly soften & golden.

Stir in apples, sage, and season with salt and pepper. Add maple syrup and cook for an additional 4to5 minutes until apples have softened.

Heat a non-stick medium sauté pan over medium heat. Add pumpkin seeds and sauté stirring occasionally for 2to3 minutes until lightly toasted. Set aside.

Gently mix squash and apple mixture with cooked Rogers Porridge Oats and Ancient Grains. Mix in pumpkin seeds and serve warm.
