Farm-To-Table Swiss Chard, Fresh Herb Goat Feta & Tomato, Onion Spelt Quesadillas
This past weeks harvest and local shares feature was gorgeous colourful Swiss Chard, Fresh Herbs and Tomatoes. I have taken this beautiful produce and created a simple & fresh rustic recipe that just screams summer!!
8 spelt wraps
1 cup goat feta, crumbled
1 tbsp. fresh basil, finely chopped
1 tbsp. fresh cilantro, finely chopped
Salt and fresh ground pepper
2 cup swiss chard, thinly sliced
2 roma tomatoes, small diced
2 green onions, white & green parts, thinly sliced
Canola oil for brushing
Preheat cast iron skillet over high heat.
In a medium bowl, add feta, basil, cilantro and season with salt and pepper. Mix all ingredients well.
Divide the feta mixture amongst four of the wraps, ensuring you spread evenly. Sprinkle a ¼ cup of swiss chard on each. Add tomatoes and onions on each. Top each with remaining wraps and brush wrap lightly with oil.
With a spatula, gently place oiled side of wrap on hot skillet. Brush exposed wrap lightly with oil. Cook until golden crisp, about 3-4 minutes. Carefully turn over wrap with spatula and cook for an additional 3-4 minutes until golden and crispy.
Cut in 4 triangles and serve with sour cream, Greek yogurt or fresh salsa.
