Broccoli Pesto Farfalle Pasta

I make pesto with just about any green veggies I can. Its a great way to get my girls to eat more vegetables. I made this broccoli pesto pasta for my farm family and they loved it as much as my family did, so I am sharing it with all of you. I used Farfalle (Bowtie) pasta as my girls love the shape. Your favourite pasta works wonderful as well. 


450 g Farfalle Pasta or your favourite Pasta

4 cup broccoli florets

2 garlic cloves

¾ cup olive oil + 4 tbsp.

1 anchovy in oil (optional)

½ cup grated Parmigiano-Reggiano, extra for topping

½ cup reserved pasta water

3 tbsp. fresh lemon juice

Salt and pepper to taste




Bring a large pot of salted water to a boil. Add broccoli and cook for 2 mins. Remove broccoli with a slotted spoon and place in food processor. Bring the water to a rolling boil and cook pasta al dente according to package directions. Drain pasta and place in bowl, reserving 1/2 cup of pasta water.

Place garlic,  3/4 cup oil, anchovy if your are using and 1/2 cup of parmesan  in a food processor with broccoli and pulse until smooth.  Just prior to tossing with pasta, add the reserved pasta water, lemon juice and salt and pepper to the pesto. Toss with pasta ensuring all pasta is well coated.

Divide on plates, drizzle each with 1 tbsp. of olive oil and top with additional Parmigiano.
