Indian Spiced Roasted Cauliflower Naan Flatbread

During the cold winter months, I love spicing up our meals. This Indian Curry Chili spiced Cauliflower spread will definitely warm you up. Serving it on top of grilled Naan Bread brings me back to those beautiful summer days. Recently, I was gifted with a delicious Indian Curry Chili Paste by ENTUBE that has a perfect kick for me. I am always selective in the products I use and with their all natural ingredients, free of sugar and GMO, ENTUBE is a great complement to my family recipes. These flatbread’s are simple to make and can be enjoyed for lunch, dinner and even breakfast  topped with a fried egg. The cauliflower spread is also versatile, use it as a dip for veggies or makes a delicious spread on sandwiches. 

Ingredients:

½ large cauliflower, cut in small florets, about 5 cups

5 tbsp. extra-virgin olive oil

1 tbsp. ENTUBE Indian Curry Chili Paste

Juice of one lemon

4 Naan Bread

Toasted sesame seeds

Fresh Cilantro, finely chopped for topping

 

Preparation:

Preheat oven to 400 F. Line a large baking sheet with parchment paper.

In a large bowl, add cauliflower and toss with 2 tbsp. of olive oil and chili paste.

Roast for 20-25 mins, stirring occasionally until cauliflower has softened and has slightly charred.

In a food processor, add cauliflower, lemon juice and the remaining olive oil. Puree until slightly smooth and set aside.

Heat a grill pan or grill over medium-high heat. Lightly brush each side of the naan bread with oil. Grill each side 2-3 minutes.

Spread cauliflower dip on top of each naan bread, sprinkle with sesame seeds and fresh cilantro.
