Chocolate Sea Salt, Peanut Butter Chocolate Chip Cookies

My family loves homage chocolate chip cookies but e all have our favourite. My husband loves peanut bitter and my little Spiciest Olive is chocolate crazed, to quote her "if only the work was made out of chocolate mommy, it would be such a nicer place" AS for me and my other girls, we love it salty, so this cookie recipe satisfies us all!! Whipping the batter for 5-6 minutes before you add the dry ingredients, makes for a fluffy melt in your mouth cookie!




1/2 cup golden Crisco all-vegetable shortening

1 cup dark brown sugar

1 large egg, room temperature

3/4 cup Chucky or smooth peanut butter

1 tsp. vanilla bean paste or pure vanilla

1 3/4 cup all-purpose flour

3/4 tsp. baking soda

1/4 tsp. salt

1 cup semi-sweet or dark chocolate chunks

chocolate sea salt for topping


In a large bowl of a mixer, add crisco, brown sugar, egg, peanut butter and vanilla. Beat on high for 5-6 minutes until mixture is creamy and real fluffy.

Beat in flour, baking soda and salt. Gently stir in chocolate chunks.

Cover bowl and place in refrigerator for 45 minutes to chill dough.

Preheat oven to 350 F. Line two large baking sheets with parchment paper.

With an ice cream scoop or cookie scoop, place 2.5 inches of cookie dough mounds on baking sheet about 1 inch apart. Repeat with remaining cookie dough. Sprinkle tops of each cookie with your preferred amount of chocolate sea salt. Bake for 8-10 minutes until cookies are slightly golden but still soft. Let cool for 10 minutes before enjoying.
