Entube Harissa Chili Egg Salad Rustic Sourdough Sandwiches
It’s almost October and here in Ontario we are still feeling the hot summer weather. The farm harvest is looking gorgeous and in abundance for your family tables.
I am so excited about my collaboration with ENTUBE, a company that provides flavourful pastes that are ready to use. I am always selective in the products I use and with their all natural ingredients, free of sugar and GMO, the ENTUBE pastes are a great complement to my family recipes. For this recipe, I took Entube to the farm and used their Harissa Chili Spiced Paste for a simple and delicious recipe for our farm lunch. Farm eggs and field arugula paired with Entube’s Harissa Chili Paste created the most flavourful sandwiches that were definitely a hit with everyone on the farm. 12 farm eggs, hardboiled
1 cup quality mayonnaise
1 tbsp. heaping Entube Harissa Chili Paste
I bunch baby arugula
1 large round rustic sourdough bread
1 cup yellow/red cherry tomatoes
Peel eggs and roughly chop them. Place in large bowl and set aside.
In a small bowl, add mayonnaise and Entube Harissa Chili Paste and mix well.
Toss eggs with spiced mayonnaise and set aside.
Cut sourdough bread vertically through the middle.
Spread egg mixture evenly on the bottom cut side of the bread.
Top with arugula and the top cut half of the sourdough bread.
Cut in eight triangles and serve with cherry tomatoes as a side.
