Tipsy Cherry and Dark Chocolate Greek Yogurt Semifreddo

Who wants to get tipsy, well tipsy on Cherries and in this easy Summer refreshing treat! Semifreddo is an Italian dessert that's like fluffy sliceable ice cream. I have added my own Greek twist to it by adding whole-milk Greek yogurt for extra creaminess. So simple to make and so refreshing and delicious. It is no churn and a great way to feed a large crowd. This Tipsy Cherry and Dark Chocolate Greek Yogurt Semifreddo is perfect for cherry season as well as an elegant way to serve an adult dessert. To make it kid friendly, avoid the rum. You cn also substitute the cherries with, grapes, peaches, plums, apricots or blueberries. So easy to get creative and have fun with.

1 1/4 cup sweet cherries, pitted and halved

2 tbsp dark rum

1 cup heavy cream

4 egg whites

Pinch salt

1 cup sugar

1 cup vanilla, whole-milk Greek yogurt

Dark Chocolate, grated 

Extra cherries for garnish


In a medium bowl, add cherries and mix well with rum. Place in refrigerator to keep cold until ready to use.

To make semifreddo, Line an 8-inch loaf pan with plastic wrap so that the excess drapes over the sides. Place in freezer to freeze.  

In a large bowl, add the cream and whip with an electric mixer until it holds firm peaks. Transfer to another bowl and refrigerate.

Wash and dry the mixer bowl. Add the egg whites and salt. Beat on medium-high speed for 3-4 minutes, or until the whites hold soft peaks. With the mixer running, add the sugar 1 tablespoon at a time. Turn the speed to high and beat for 4 minutes, or until the egg whites are thick and glossy.

Mix the yogurt with the cherries and their juices. Gently fold in the cherry mixture into the egg white and cream mixture. 

Pour into the frozen loaf pan ensuring the plastic wrap stays draped over the sides. Top with another piece of plastic wrap so the semifreddo is not exposed. Place in freezer for up to 4 hours or preferably overnight.

When ready to serve, invert pan onto a cold serving platter and and peel off the plastic wrap.

Sprinkle the semifreddo with dark chocolate and top with extra cherries for garnish. You can also melt some chocolate anddip a few cherries in for garnish as well.

Serve immediately.
