Cypriot Olive Bundt Cake

This olive cake was inspired from my recent visit to my homeland Cyprus. I had spent a week in the village of Derynia with my godmother and god sister, where we spent most of our time cooking, sharing recipes and making beautiful memories. For those of you who know me, I am a big fan of Olives and love baking my mum’s olive bread.  My god sister introduced me to this simple yet delicious savoury cake made with olives and I just had to adopt it. Below, I have shared my version of my god sisters savoury olive cake and since us Greeks have been introduced to the Boondt Cake by our friends The Miller’s ;) I decided to give it a try! Hope you enjoy it as much as my family does. xo

Ingredients:

4 cup all-purpose flour

4 tsp. baking powder

3 cup sundried black olives, pitted

1 cup green onion, thinly sliced, white and green parts

1 cup cilantro, chopped

3 tsp. dry mint

¾ cup extra-virgin olive oil

2 cup fresh squeezed orange juice

½ cup sparkling water

 

Preparation:

Preheat oven to 350 F. Grease a 10 inch bundt pan.

In a large mixing bowl, add flour and baking soda and mix well.

Add remaining ingredients and mix until well incorporated.

Pour in pan and bake for 1 hour or until inserted toothpick comes out clean.
