Coconut Date Walnut & Crispy Spicy Salted Umeboshi Plum Cigars
These delicious coconut cigar shaped treats are one of my favourite and are a big hit with my girls. I incorporated one of their favourite cereals, Rice Krispies to give them a slight crispy crunch and sweetened them with soft dates. Since our family loves a spicy kick, I flavoured them with ENTUBE’s Spicy Salted Umeboshi Plum Paste. It’s a unique modern Japanese flavour with Ume Japanese Plum combined with cayenne pepper. I love it, and can’t wait for you to try this simple and fun recipe.
1 cup unsalted butter
½ cup walnuts, chopped
1 tsp. pure vanilla
1 kilo pitted dates, finely chopped
1 tbsp. ENTUBE Spicy Salted Umeboshi Plum Paste
4 cup Rice Krispies Cereal
Unsweetened coconut, finely shredded for rolling
Line 2 large baking sheets with parchment paper and set aside.
In a large pot, melt butter over medium heat. Add walnuts and stir for 1-2 minutes until slightly softened.
Add vanilla and mix well. Add dates and stir for 5-6 minutes until warm and soft. Add paste and stir until well incorporated.
Remove from heat and stir in rice krispies until well blended.
Place coconut on a large plate.
Place 2 tbps. of mixture into your hand and roll into a cigar shape. Roll cigar into coconut until well coated. Place on lined baking sheet and repeat with remaining mixture.
