Cedar Plank Mashed Potatoes with Horseradish & Chives

Ingredients:

1 large Cedar Plank

6 large Yukon gold potatoes, peeled and quartered

1/3 cup whole milk

2 tbsp. (30 mL) unsalted butter, softened

1 tbsp. (15 mL) prepared horseradish

¼ cup (60 mL) fresh chives, finely chopped

Salt and fresh ground black pepper

 

Preparation:

Submerge Cedar Plank in water to soak for one hour.

In the meantime, in a large pot of boiling salted water, cook potatoes until soft and tender, about 15 mins.

Drain potatoes of all excess water and place back in the pot. Turn stove to low heat and return pot back on burner. Add milk, butter and horseradish, mash until creamy and smooth. Remove from heat, add chives and season with salt and pepper and mix well. Set aside to cool.

Preheat grill to medium-high heat.

Using a piping bag or scoop, form potatoes into mounds on the pre-soaked plank.

Place on preheated grill with the lid closed for 15 mins or until potatoes have formed a golden brown outer crust.
